Tropical Chicken Salad
Yield: 4-6 servings
4 chicken breasts (cooked & cut into 1" cubes)
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon sage
6 cups mixed salad greens
2 cups Sun Rich Tropical Fruit Salad*
1 tablespoon minced fresh mint
1/2 cup chopped toasted walnuts
Dressing: Whisk olive oil, vinegar, mustard and sage together in a small bowl. Combine chicken, salad greens, fruit salad and mint in large bowl. Add dressing and toss well. Sprinkle with walnuts and serve.
*Sun Rich Tropical Fruit Salad consists of: Orange, Pineapple, Melon, Mango, Papaya and Kiwi.
