3 cups Sun Rich orange sections, diced
1 medium fennel bulb (1 1/2 pounds), trimmed and coarsely chopped
1 jalapeño chili, seeded and minced
1/4 cup chopped fresh cilantro leaves
1/2 small red onion, thinly sliced
1/4 teaspoon salt
Combine diced orange sections, fennel, jalapeño, cilantro, red onion, and salt; stir to combine.
Cover and refrigerate if not serving right away.
