West Coast Salad

Yield: 6 servings

Recipe Ingredients:

1 Head Lettuce (leaves washed and torn apart)
1 lb. Shrimp, cooked, peeled, deveined
2 c Sun Rich Orange sections
1 c Sun Rich Grapefruit sections
2 Tomatoes, cut in wedges
1 Red bell pepper, seeded, julienne sliced
1 Avocado, peeled, cut in wedges
1/2 c Julienne sliced celery
1/2 c Pitted black olives

Recipe Method:

1. Arrange lettuce leaves on a serving plate.

2. In a bowl combine all other ingredients and then serve over the lettuce.

3. Serve with your favourite salad dressing
