Indian Spiced Fruit Salad

Yield: 6 servings

Salad Ingredients:

2 mangos, semi-ripe, peeled and pitted, sliced
2 cups Sun Rich Grapefruit sections
2 cups Sun Rich Orange sections
2 pears, peeled and cut into wedges

Dressing

1 teaspoon ginger, finely minced
2 tablespoons white vinegar
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
1 tablespoon tamarind paste
1/4 cup roasted, unsalted peanuts, roughly chopped
2 tablespoons fresh cilantro, chopped chiffonade*
2 tablespoons fresh mint, chopped chiffonade*
1 teaspoon ground roasted cumin
1 teaspoon cayenne

Recipe Method:

  1. Place the cut fruit in a large bowl.
  2. In a medium-size bowl, combine all dressing ingredients and mix well.
  3. Pour the dressing over the fruit, mix gently, and serve.

*Chiffonade is a cutting technique that produces long, thin ribbons of herbs or greens. Leaves are stacked and rolled, then sliced finely in the direction of the roll.
