Curried Turkey Salad With Cashews

Yield: 6 servings

Recipe Ingredients:

1 cup Diced pineapple
4 cups Cubed turkey meat
1 1/2 cups Mayonnaise
1/3 cup Dry white wine
1/4 cup Mango chutney
2 tsp. Curry powder
1 tsp. Fresh lemon juice
1/2 tsp. Ground ginger
3 Green onions, chopped
2 Celery stalks, chopped
1/2 cup Grapes
2/3 cup Roasted salted cashews

Recipe Method:

  1. Whisk mayonnaise, wine, chutney, curry powder, lemon juice and ginger in large bowl.
  2. Add turkey, onions, celery, pineapple and grapes to dressing; toss to coat.
  3. Season with salt and pepper.
  4. Mix cashews into salad just before serving.
