Curried Orange and Avocado Salad
Yield: 4 servings
4 tsp. peanut oil
1 1/2 tsp. curry powder
1 garlic clove, crushed
1/2 tsp. Salt
3 tsp. White Wine Vinegar
1 tsp. Dijon mustard
1 tsp. honey
1 lb. mixed greens
2 cups Sun Rich orange sections
2 large avocado, peeled, cut into sliced fans
1/2 cup red onion, thinly sliced
6 tsp. sliced almonds, toasted
- Whisk peanut oil, curry powder, garlic, salt, vinegar, mustard and honey in a bowl.
- Toss greens, onions and oranges together in bowl.
- Divide evenly between 4 plates. Arrange avocado fans on top.
- Drizzle with dressing and sprinkle with almonds
