Chicken Salad with Diced Mango

Recipe Ingredients:
10 oz. Cooked white meat chicken, cubed
1 package Sun Rich diced mango and pineapple (12oz diced mango and pineapple)
1 stalk celery, minced (around ½ cup)
¼ cup minced parsley
6 oz. plain low-fat yogurt
1 tbsp. lemon juice
¼ tsp. ground black pepper
¼ tsp. salt
4 cups fresh salad greens
¼ cup crushed peanuts

Recipe Method:
When you are ready to serve place first 7 ingredients in a medium bowl and stir to combine. Scoop about 3/4 cup of chicken-mango mixture on top 1 cup of salad greens; top each with 1 tsp. crushed peanuts. Must be served and eaten immediately after mixing.
