Asian Fusion Fruit Lettuce Wraps


Yield: 6 servings

Recipe Ingredients:

Wrap Filling
1 cup Sun Rich Pineapple, diced
1 cup Sun Rich Mango Spears, diced
½ cup Jicama, diced
½ cup Radish, diced
3 tbsp. Cilantro, coarsely chopped
½ cup Spicy Roasted Pecans (recipe below)

6 large Iceberg lettuce leaves, washed and patted dry

Spicy Roasted Pecans
½ cup Shelled unsalted pecan pieces
1½ tbsp. Water
1½ tsp. Sugar
1/8 tsp. Cayenne Pepper
Blend all ingredients in pan, stir on med-high heat until water disappears. Transfer to baking sheet, bake at 300ºF for 20-25 minutes, stirring twice to avoid scorching. Cool completely and store in airtight container.

¼ cup Extra Virgin Olive Oil
1½ tsp. Sesame Oil
1½ tsp. Honey
1 tbsp. Brown Sugar
2 tbsp. Rice Vinegar
½ tsp. Freshly Grated Ginger
½ tsp. Curry Powder
1 tsp. Sweet Chili Sauce
1 clove Minced Garlic
1 tsp. Smooth Peanut Butter
Place dressing ingredients into a glass bowl or measuring cup. Microwave for 15-30 seconds, until peanut butter softens. Whisk ingredients together until thoroughly blended. Let cool for 10-15 minutes.

Recipe Method:

  1. While dressing cools, prepare wrap filling. Place wrap filling ingredients in a bowl and mix thoroughly. Spoon ½ cup of wrap mix into cupped lettuce leaves.
  2. Just before serving, stir dressing again. Drizzle liberally on the individual wraps & serve.
