Salmon & Orange Bake

Yield: 4 servings

Recipe Ingredients:

1 red onion
2 cups Sun Rich orange rounds (sections can also be used)
6 tbsp. Light olive oil
2 tbsp. Cider vinegar
2 tbsp. Green peppercorns
4 tbsp. Chopped fresh parsley
1 medium whole salmon (score the fish on both sides)

Recipe Method:
Place half the onion and orange slices in a layer on a large piece of tin foil; placing the fish on top and cover with the remaining orange and onion slices.

Mix the remaining marinade ingredients and pour over the fish. Cover and let marinade for 4 hours, occasionally spooning the marinade over the fish.

Sealing the foil edges securely, bake on a medium grill for 15 minutes per pound, checking regularly.
