Yield: 4 servings
4 tsp. Butter
1 tbsp. Melted butter
4 cups orange sections
2 tbsp. Maple syrup
2 tbsp. Cointreau or grand Marnier
whipped fresh cream
4 tbsp. Chocolate shavings
4 mint leaves for garnish
Cut 4 double thickness squares of foil, large enough to wrap each orange. Brush the center of each square with plenty of melted butter.
Take 8 orange sections per foil pouch and put into the shape of an orange. Shape the foil so that it keeps the orange shape, leaving an opening at the top.
Mix together the maple syrup and liqueur and spoon the mixture over the oranges.
Add a teaspoon of butter to each pouch and close the foil at the top to seal in the juices. Place the pouches on a hot grill for 10 – 12 minutes, until hot.
Serve with whipped fresh cream, mint leaf and chocolate shavings.
