Chili Chicken Pineapple Kebabs

Yield: 6 servings

Recipe Ingredients:

1 1/2 cups Sun Rich pineapple chunks
1 tsp. Ground cumin
1 tsp. Ground coriander
1 garlic clove, crushed
2 tsp. Chili powder
1 tsp. Salt
1 tbsp. Low-fat plain yogurt
1 tbsp. Chopped fresh cilantro
4 boneless, skinless chicken breasts (cut into 1" cubes)
1/2 red bell pepper (cut into 1" cubes)
1/2 green bell pepper (cut into 1" cubes)
1 large onion (cut into 1" cubes)
6 cherry tomatoes
1 tbsp. Vegetable oil

Recipe Method:
In a blender, puree 1/2 cup pineapple chunks with cumin, coriander, garlic, chili powder, salt, yogurt and fresh cilantro. Pour mixture over the diced chicken and let marinate for 1 hour. Cut the peppers and onions into chunks. Arrange the chicken pieces, vegetables and pineapple chunks alternately onto presoaked skewers adding the cherry tomato at the end.
Brush the kebabs with oil and cook on a medium grill for about 10 minutes, turning regularly and basting the chicken pieces with the marinade until cooked through.
